Sautéed Cajun shrimp served over velvety stone-ground grits enriched with Greek yogurt for a satisfying and zesty finish.
INGREDIENTS
8 oz shrimp
0.25 cup stone-ground grits
0.25 cup non-fat Greek yogurt
1 tsp olive oil
0.5 cup red bell pepper
0.25 cup yellow onion
1 clove garlic
1 tsp Cajun seasoning
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp lemon juice
1 tbsp fresh parsley
1 cup water
PREPARATION
In a small saucepan, bring water and sea salt to a boil.
Whisk in the stone-ground grits, reduce heat to low, cover, and simmer for 15-20 minutes until tender.
While grits cook, heat olive oil in a large skillet over medium-high heat.
Add diced onion and bell pepper, sautéing for 3-4 minutes until softened.
Stir in minced garlic and Cajun seasoning, cooking for 1 minute until fragrant.
Add shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
Once grits are done, remove from heat and stir in the non-fat Greek yogurt and black pepper until creamy.
Squeeze lemon juice over the shrimp and stir in fresh parsley.
Serve the zesty shrimp and vegetables over a bed of the creamy grits.
