Seared Salmon Fillet with Steamed Broccoli and Garlic Cauliflower Mash
Pan-seared salmon fillet served over a garlic cauliflower mash with tender steamed broccoli, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Broccoli florets
1 tsp Olive Oil
2 cloves Garlic, minced
2 tbsp Nonfat Greek Yogurt
PREPARATION
Steam the cauliflower florets and broccoli florets in a steamer basket over boiling water until very tender, about 8 to 10 minutes.
While the vegetables steam, season the salmon fillet with a pinch of salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4 to 5 minutes until the skin is crisp, then flip and cook for another 3 to 4 minutes until cooked through.
Remove the steamed cauliflower and place it in a food processor or blender with the minced garlic and Greek yogurt.
Pulse the cauliflower mixture until it reaches a smooth, mash-like consistency, adding a splash of water if needed.
Serve the seared salmon over a generous bed of garlic cauliflower mash with the steamed broccoli on the side.
