Silky Tofu Scramble with Edamame and Scallions
Soft silken tofu sautéed with ginger, garlic, and bright edamame, finished with a drizzle of toasted sesame oil for a velvety texture.
INGREDIENTS
250g Silken Tofu
60g Shelled Edamame
40g Avocado
1 tsp Toasted Sesame Oil
1 tsp Nutritional Yeast
15g Scallions
10g Tamari
3g Fresh Ginger
3g Garlic
1g Turmeric
PREPARATION
Drain the silken tofu and gently pat dry with a paper towel, then break it into large, rustic chunks.
Heat the toasted sesame oil in a non-stick skillet over medium heat.
Add the minced garlic and grated ginger to the pan, sautéing for about 1 minute until fragrant.
Toss in the shelled edamame and cook for 2 minutes until they are heated through and bright green.
Add the tofu chunks to the skillet along with the nutritional yeast, turmeric, and tamari.
Gently fold the tofu with a spatula to coat it in the spices, cooking for 3-4 minutes until the tofu is heated through but still holds its soft shape.
Remove from heat and serve immediately, garnished with sliced scallions and fresh avocado slices.
