9 oz Wild Atlantic Salmon Fillet
3 cups Cauliflower florets
1.5 cups Green beans
1 tsp Olive oil
2 tbsp Non-fat Greek yogurt
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
During the last 5 minutes of cauliflower steaming, add the green beans to the steamer basket to cook until bright green and tender-crisp.
While vegetables steam, season the salmon fillet with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until cooked through and golden.
Transfer the steamed cauliflower to a bowl or food processor, add the minced garlic and Greek yogurt, and mash or blend until smooth and creamy.
Plate the garlic cauliflower mash alongside the seared salmon and steamed green beans, seasoning with an extra pinch of salt if desired.
