PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, season the salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crisp and the center is just opaque.
Steam the green beans in a separate basket or during the last 5 minutes of the cauliflower steaming until bright green and tender-crisp.
Transfer the steamed cauliflower to a food processor or bowl; add the ghee, minced garlic, and chives, then blend or mash until smooth and creamy.
Plate the herb-cauliflower mash, top with the seared salmon, and serve the steamed green beans on the side.
