6.5 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower florets
1.5 cups Fresh green beans
1 tbsp Extra virgin olive oil
1 clove Garlic, minced
Sea salt and black pepper to taste
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for about 10-12 minutes until they are very tender when pierced with a fork.
While the cauliflower is steaming, trim the ends of the green beans and steam them in a separate basket for 5-7 minutes until they are bright green and crisp-tender.
Transfer the tender cauliflower to a food processor or blender along with the minced garlic, half of the olive oil, sea salt, and black pepper, then blend until creamy and smooth.
Pat the salmon fillet completely dry with a paper towel and season both sides generously with sea salt and cracked black pepper.
Heat the remaining half tablespoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is perfectly crispy and the fish flakes easily.
