Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon paired with creamy cauliflower mash and garlic-sautéed green beans, finished with a bright squeeze of lemon and a perfectly flaky texture.
INGREDIENTS
6 ounces Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Green Beans
1 teaspoon Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a blender or food processor and blend until smooth and creamy, seasoning with a pinch of sea salt and black pepper.
Heat half of the olive oil in a large skillet over medium heat and sauté the green beans and minced garlic until the beans are bright green and crisp-tender.
Remove the beans from the skillet and set them aside on a warm plate.
Add the remaining olive oil to the same skillet, increase the heat to medium-high, and sear the salmon fillet for approximately 4-5 minutes per side until golden on the outside and flaky on the inside.
Plate the salmon over a generous portion of the cauliflower mash and serve the garlic green beans alongside.
