PREPARATION
Heat the olive oil in a medium non-stick skillet over medium heat.
Slice the turkey sausage into rounds and add them to the skillet, cooking until lightly browned.
Add the fresh spinach to the pan and sauté for about one minute until the leaves are just wilted.
Remove the sausage and spinach from the pan and set them aside on a small plate.
