Scoop about 1.5 tablespoons of the mixture at a time and roll into small balls or nugget shapes.
Place the almond flour in a shallow dish and lightly roll each bite in the flour until evenly coated.
Arrange the bites on the prepared baking sheet and lightly brush or spray the tops with the extra virgin olive oil.
Bake for 18 to 20 minutes, flipping the bites halfway through, until they are golden brown and cooked through.
