Golden Lemon Herb Roasted Salmon
Salmon fillets oven-roasted with a vibrant turmeric-herb rub and served alongside crisp-tender asparagus for a bright, citrus-infused meal.
INGREDIENTS
7 oz salmon fillet
1 cup asparagus spears
1 tsp extra virgin olive oil
0.5 whole lemon
1 clove garlic
1 tbsp fresh dill
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp ground turmeric
PREPARATION
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
Finely mince the garlic clove and roughly chop the fresh dill.
In a small bowl, whisk together the extra virgin olive oil, minced garlic, ground turmeric, sea salt, and black pepper until well combined.
Place the salmon fillet on one side of the prepared baking sheet and arrange the trimmed asparagus spears on the other side.
Brush the turmeric-garlic oil mixture evenly over the top of the salmon and toss the asparagus lightly with any remaining oil to coat.
Slice the lemon half into thin rounds and layer them across the top of the salmon fillet for a burst of citrus.
Roast in the center of the oven for 12 to 15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
Remove from the oven and garnish immediately with the chopped fresh dill and an extra squeeze of lemon juice if desired.
