Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with garlic-infused cauliflower mash and steamed green beans, finished with a bright squeeze of fresh lemon.
INGREDIENTS
6.1 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, approximately 8 to 10 minutes.
While cauliflower steams, trim the ends of the green beans and steam them separately for 4 to 5 minutes until crisp-tender and bright green.
Place the steamed cauliflower in a bowl or food processor with minced garlic and half of the olive oil, then mash or pulse until smooth.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with a pinch of salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4 to 5 minutes per side until the exterior is golden and the center is just opaque.
Serve the seared salmon over a bed of garlic mashed cauliflower with the steamed green beans on the side.
