Preheat oven to 375°F and lightly grease a small baking dish with avocado oil.
In a medium skillet over medium heat, cook the bacon slices until crispy, then remove and chop into small bits.
In the same skillet, briefly sauté the spinach until just wilted, about 1 minute.
In a bowl, whisk together the whole eggs, egg whites, sea salt, black pepper, and garlic powder until well combined.
Stir the wilted spinach and half of the bacon bits into the egg mixture.
Pour the egg mixture into the prepared baking dish.
Sprinkle the remaining bacon bits on top and drizzle the maple syrup evenly over the surface.
Bake for 18-22 minutes, or until the eggs are set and the top is golden and slightly caramelized.
