6 oz Atlantic Salmon Fillet
120g Sweet Potato, cubed
100g Fresh Spinach
1 tbsp Olive Oil
2 cloves Garlic, minced
PREPARATION
Peel and dice the sweet potato into small cubes.
Place sweet potato in a pot of boiling water and cook for 10-12 minutes until fork-tender.
Drain the potatoes and mash them until smooth, seasoning with a pinch of sea salt.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the skin is crispy and the fish is cooked through.
Remove the salmon from the pan and set it aside to rest.
Add the remaining olive oil and minced garlic to the same pan, sautéing for 30 seconds until fragrant.
Add the fresh spinach to the pan and toss until just wilted.
Plate the sweet potato mash, top with the seared salmon, and serve the garlic spinach on the side.
