Seared Lean Beef Strips with Steamed Green Beans and Cauliflower Mash
Quick-seared sirloin strips served over a creamy garlic cauliflower mash alongside a portion of bright, crisp steamed green beans.
INGREDIENTS
6.35 oz Lean Top Sirloin Steak, sliced into strips
150g Cauliflower florets
100g Fresh green beans, trimmed
1 tsp Extra virgin olive oil
1 clove Garlic, minced
Pinch of sea salt and black pepper
PREPARATION
Steam the cauliflower florets and the minced garlic clove in a steamer basket over boiling water for 10-12 minutes until very soft.
While cauliflower is steaming, add the green beans to the steamer for the last 5 minutes of cooking until they are bright green and tender-crisp.
Transfer the steamed cauliflower and garlic to a food processor or bowl and mash until a smooth, creamy consistency is reached, seasoning with a pinch of salt.
Season the beef strips with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over high heat until shimmering.
Add the beef strips to the skillet in a single layer and sear for 1-2 minutes per side until a brown crust forms and they reach your desired doneness.
Plate the cauliflower mash first, topping it with the seared beef strips and serving the green beans on the side.
