PREPARATION
Pat the salmon fillet dry with paper towels and season both sides with half of the sea salt and black pepper.
Heat the extra virgin olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the skillet, skin-side down, and sear for 4-5 minutes until the skin is crispy and golden.
Carefully flip the fillet and cook for another 2-3 minutes until the salmon is just cooked through and opaque. Remove from the pan and set aside on a plate.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.
Add the fresh baby spinach to the skillet and toss frequently until the leaves are just wilted.
