6 oz Wild Atlantic Salmon Fillet
250g Cauliflower Florets
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
1 clove Garlic, minced
Sea salt and black pepper to taste

PREPARATION
Place cauliflower florets and the garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, add green beans to the steamer for the last 5 minutes of cooking until bright green and crisp-tender.
Pat the salmon fillet dry with paper towels and season both sides with sea salt and black pepper.
Heat olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the exterior is golden and the inside is cooked to your preference.
Transfer the steamed cauliflower and garlic to a bowl or food processor, add the ghee, and mash or blend until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve alongside the steamed green beans with a fresh squeeze of lemon.
