INGREDIENTS
3.5 oz Wild Atlantic Salmon
130g Sweet Potato
100g Green Beans
2 tsp Extra Virgin Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until tender.
Drain the water and mash the sweet potato until smooth, adding a pinch of sea salt.
Pat the salmon dry with a paper towel and season both sides with salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side up and sear for 4 minutes, then flip and cook for another 3-4 minutes until golden.
In a separate skillet, heat the remaining teaspoon of olive oil and sauté the green beans and minced garlic for 5 minutes until crisp-tender.
Serve the salmon over the sweet potato mash with the garlic green beans and a squeeze of fresh lemon.
