5.5 oz Chicken Breast
140g Sweet Potato, cubed
150g Broccoli florets
1 tbsp Extra Virgin Olive Oil
1 tsp Dried Thyme and Rosemary
PREPARATION
Preheat your oven to 400°F (200°C).
Peel and cube the sweet potato into 1-inch pieces and toss them with half of the olive oil and a pinch of sea salt.
Spread the sweet potatoes on a parchment-lined baking sheet and roast for 10 minutes.
While potatoes roast, rub the chicken breast with the remaining olive oil and the dried herbs.
Add the chicken breast to the baking sheet with the sweet potatoes and continue roasting for 18-22 minutes until the chicken is cooked through.
While the chicken and potatoes finish, steam the broccoli florets over boiling water for 5-6 minutes until they are bright green and tender-crisp.
