Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served over creamy garlic mashed cauliflower with a side of bright, crisp steamed green beans.
INGREDIENTS
6.3 ounces Wild Sockeye Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 teaspoons Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
In the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until crisp-tender.
Transfer the steamed cauliflower to a bowl and mash thoroughly with 1 teaspoon of olive oil, minced garlic, salt, and pepper until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the remaining 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes on the first side to develop a golden crust.
Flip the salmon and cook for an additional 2-3 minutes until the fish is opaque and flakes easily with a fork.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side.
