Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served with crisp-tender garlic green beans and nutty brown rice, finished with a squeeze of fresh lemon for a bright, zesty zing.
INGREDIENTS
7 oz Wild Atlantic Salmon fillet
1/2 cup cooked Brown Rice
1 cup fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1/2 Lemon, for juicing
Pinch of Sea Salt and Black Pepper
PREPARATION
Prepare the brown rice according to package instructions or reheat pre-cooked rice until steaming.
Season the salmon fillet on both sides with a pinch of sea salt and black pepper.
Heat a non-stick skillet over medium-high heat with half of the olive oil.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan and set aside.
In the same pan, add the remaining olive oil and the trimmed green beans with a splash of water.
Cover and steam the beans for 3 minutes, then remove the lid and add the minced garlic.
Sauté the beans and garlic for 1-2 minutes until the beans are crisp-tender and the garlic is fragrant.
Plate the seared salmon alongside the brown rice and garlic green beans.
Finish the dish with a generous squeeze of fresh lemon juice over the salmon and vegetables.
