6 oz Salmon Fillet
200g Cauliflower florets
100g Green Beans
1 tbsp Non-fat Greek Yogurt
1/2 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Place the cauliflower florets and the peeled garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
During the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until they are bright green and crisp-tender.
While the vegetables steam, heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with a pinch of sea salt and black pepper, then place it skin-side down in the hot skillet.
Sear the salmon for 4-5 minutes on the skin side until crispy, then flip and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Transfer the steamed cauliflower and garlic to a food processor or bowl; add the Greek yogurt and blend or mash until smooth and creamy.
Plate the garlic mashed cauliflower alongside the steamed green beans and the seared salmon fillet, finishing with a fresh squeeze of lemon juice if desired.
