Crispy Bacon-Cheddar Stuffed Potatoes
Twice-baked Russet potatoes stuffed with savory ground turkey and melted cheddar, topped with golden-crusted bacon bits and a cool dollop of Greek yogurt.
INGREDIENTS
1 medium Russet potato
0.5 tsp Avocado oil
0.25 tsp Sea salt
4 oz Ground turkey
0.5 tsp Garlic powder
0.25 tsp Black pepper
1 slice Turkey bacon
0.25 oz Sharp cheddar cheese
0.25 cup Plain Greek yogurt
1 tbsp Fresh chives
PREPARATION
Preheat oven to 400°F.
Scrub the Russet potato, rub with avocado oil and a pinch of sea salt, then bake for 45-50 minutes until tender.
While potato bakes, cook turkey bacon in a skillet over medium heat until crispy, then chop into small bits.
In the same skillet, brown the ground turkey with garlic powder, black pepper, and the remaining sea salt until fully cooked.
Slice the baked potato in half lengthwise and scoop out the center into a bowl, leaving a thin shell.
Mash the potato flesh with the ground turkey, half of the cheddar cheese, and half of the Greek yogurt.
Spoon the mixture back into the potato skins and top with the remaining cheddar cheese.
Place under the broiler for 2-3 minutes until the cheese is melted and bubbly.
Garnish with the remaining Greek yogurt, crispy bacon bits, and fresh chives before serving.
