Crispy Golden Mac and Cheese Bites
Chickpea pasta shells folded into a creamy Greek yogurt cheese sauce and baked until the edges are golden and irresistibly crispy.
INGREDIENTS
2 oz Chickpea pasta shells
0.5 cup Non-fat plain Greek yogurt
0.5 cup Liquid egg whites
1 oz Sharp cheddar cheese
2 tbsp Nutritional yeast
0.25 tsp Garlic powder
0.25 tsp Onion powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Avocado oil
PREPARATION
Preheat your oven to 400°F and lightly grease a standard muffin tin with avocado oil.
Bring a pot of water to a boil and cook the chickpea pasta shells for 2 minutes less than the package directions until al dente.
In a large mixing bowl, whisk together the Greek yogurt, liquid egg whites, shredded cheddar cheese, nutritional yeast, garlic powder, onion powder, sea salt, and black pepper.
Drain the cooked pasta thoroughly and fold it into the yogurt and cheese mixture until every shell is well coated.
Distribute the mixture evenly into the prepared muffin tin, filling each cup nearly to the top.
Bake for 15 to 20 minutes until the bites are set and the edges have turned a beautiful golden brown.
Allow the bites to cool in the tin for at least 5 minutes before gently removing them with a knife to ensure they maintain their shape.
