Spicy Creamy Pork Dan Dan Noodles
Sautéed ground pork and tender bok choy tossed in a velvety, spiced tahini sauce over delicate soba noodles for a deeply savory and satisfying bowl.
INGREDIENTS
7 oz Ground pork
0.75 oz Soba noodles
1 tbsp Tahini
1 tbsp Tamari
1 tsp Chili oil
1 tsp Rice vinegar
1 tsp Fresh ginger
1 clove Fresh garlic
1 cup Bok choy
1 whole Green onion
0.25 cup Water
PREPARATION
Bring a small pot of water to a boil and cook the soba noodles for 4-5 minutes until tender, then drain and rinse with cold water.
In a small bowl, whisk together the tahini, tamari, chili oil, rice vinegar, and water until smooth and creamy.
Heat a non-stick skillet over medium-high heat and add the ground pork, breaking it apart with a spatula until browned and cooked through.
Add the minced garlic and grated ginger to the pork and sauté for 1 minute until fragrant.
Stir in the chopped bok choy and cook for 2 minutes until the leaves are wilted and the stems are slightly tender.
Reduce the heat to low, add the cooked noodles and the prepared tahini sauce to the skillet, tossing everything together until well-coated.
Garnish with thinly sliced green onions and serve immediately in a warm bowl.
