PREPARATION
Heat a large non-stick skillet over medium-low heat and melt half of the ghee.
Place one slice of bread in the pan, then layer with half the cheese, half the turkey, and all of the baby spinach.
Add the second slice of bread, followed by the remaining turkey and the remaining cheese.
Top with the third slice of bread and season the exterior with garlic powder and sea salt.
Cook for 3-4 minutes until the bottom is golden, then add the remaining ghee to the pan and carefully flip the entire sandwich.
Press down firmly with a spatula and cook for another 3 minutes until the cheese is gooey and the bread is toasted.
