Golden Pan-Seared Salmon with Roasted Asparagus
Pan-seared salmon fillets develop a crispy golden crust alongside tender oven-roasted asparagus spears drizzled with bright lemon and garlic.
INGREDIENTS
7 oz Salmon fillet
1 cup Asparagus spears
0.75 tbsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Trim the woody ends from the asparagus spears and place them on the baking sheet.
Drizzle the asparagus with 0.25 tbsp of olive oil and sprinkle with half of the sea salt and black pepper.
Roast the asparagus in the oven for 12 minutes until tender and slightly charred.
While the vegetables roast, pat the salmon fillet dry with a paper towel and season both sides with garlic powder and the remaining salt and pepper.
Heat the remaining 0.5 tbsp of olive oil in a stainless steel or cast-iron skillet over medium-high heat.
Place the salmon in the hot pan skin-side down and sear for 4 to 5 minutes until the skin is crispy and golden.
Flip the salmon carefully and cook for an additional 3 minutes until the center is just opaque.
Remove the salmon and asparagus from heat, squeeze the fresh lemon over everything, and serve immediately.
