Seared Salmon with Roasted Sweet Potato and Steamed Broccoli
Pan-seared salmon served with caramelized roasted sweet potato cubes and tender steamed broccoli, finished with a bright squeeze of fresh lemon.
INGREDIENTS
3.5 oz Salmon Fillet
150g Sweet Potato
100g Broccoli
2 tbsp Extra Virgin Olive Oil
0.5 unit Lemon
0.25 tsp Sea Salt
0.25 tsp Black Pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Peel and cube the sweet potato into bite-sized pieces then toss with half of the olive oil and a pinch of salt.
Spread the potatoes on the baking sheet and roast for 25 minutes until the edges are golden and caramelized.
While the potatoes roast, cut the broccoli into florets and steam over boiling water for 5-7 minutes until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon carefully and cook for another 2-3 minutes until the center is just opaque.
Plate the seared salmon alongside the roasted sweet potatoes and steamed broccoli.
Finish the dish with a generous squeeze of fresh lemon juice before serving.
