Seared Steak with Garlic Green Beans and Cheesy Mashed Potatoes
Pan-seared sirloin paired with garlic-sautéed green beans and Yukon Gold mash folded with sharp cheddar and Greek yogurt for a velvety finish.
INGREDIENTS
4.5 oz Sirloin Steak
120g Yukon Gold Potatoes, cubed
100g Fresh Green Beans, trimmed
10g Sharp Cheddar Cheese, shredded
1 tbsp Nonfat Plain Greek Yogurt
1 clove Garlic, minced
1 tsp Olive Oil
1 tsp Unsalted Butter
PREPARATION
Place the cubed potatoes in a pot of salted water and boil for 12-15 minutes until fork-tender.
While potatoes boil, season the steak generously with salt and pepper on both sides.
Heat a heavy skillet over medium-high heat with the butter and sear the steak for 3-4 minutes per side for medium-rare.
Remove the steak from the pan and let it rest for 5 minutes to lock in the juices.
In the same skillet, add olive oil and minced garlic, then toss in the green beans and sauté for 5 minutes until tender-crisp.
Drain the potatoes and mash them thoroughly, then stir in the Greek yogurt and shredded cheddar until smooth and melty.
Slice the steak against the grain and serve alongside the cheesy mash and garlic beans.
