Tender Garlic Steak Bites with Creamy Mashed Potatoes
Pan-seared sirloin steak bites tossed in a fragrant garlic ghee, served over velvety mashed potatoes for a comforting and protein-packed meal.
INGREDIENTS
4.5 oz sirloin steak
1 medium Yukon Gold potato
0.25 cup non-fat Greek yogurt
0.5 tsp ghee
0.5 tsp extra virgin olive oil
2 cloves garlic
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp fresh parsley
PREPARATION
Peel and cube the potato, then boil in a pot of salted water until fork-tender, about 12 to 15 minutes.
While the potatoes boil, pat the steak dry with paper towels and season with half of the sea salt and black pepper.
Heat the ghee in a cast-iron skillet over medium-high heat until it begins to shimmer.
Add the steak bites in a single layer, searing for 2 minutes per side without crowding the pan until a golden crust forms.
Mince the garlic and add it to the skillet during the last 30 seconds of cooking, tossing to coat the steak, then remove from heat.
Drain the potatoes and mash them thoroughly with the Greek yogurt, olive oil, and the remaining salt and pepper until smooth.
Plate the creamy mashed potatoes and top with the garlic steak bites, garnishing with finely chopped fresh parsley.
