60g Turkey Sausage, sliced
180g Liquid Egg Whites
60g Fresh Spinach

PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the olive oil and roast for 20-25 minutes until tender and slightly browned.
While the potatoes roast, heat the remaining olive oil in a non-stick skillet over medium-high heat.
Add the sliced turkey sausage to the skillet and cook for 3-4 minutes until nicely browned on both sides.
Add the fresh spinach to the skillet and sauté for 1-2 minutes until the leaves are wilted.
