1 medium Yukon gold potato
0.25 tbsp Avocado oil
0.25 tbsp Ghee
0.5 tsp Smoked paprika
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 cup Asparagus
PREPARATION
Preheat your oven to 400°F and prepare your grill for medium-high heat.
Dice the Yukon gold potato into small cubes and toss them in a bowl with the avocado oil and half of the sea salt and black pepper.
Spread the potatoes on a parchment-lined baking sheet and roast for 20-25 minutes until they are golden and crispy.
Rub the top sirloin steak evenly with the ghee, smoked paprika, garlic powder, and the remaining sea salt and black pepper.
Place the steak on the hot grill and cook for 4-5 minutes per side for medium-rare, adding the asparagus to the grill during the last 4 minutes of cooking.
Remove the steak from the grill and let it rest for 5 minutes before slicing it against the grain to serve with the potatoes and charred asparagus.
