In a medium mixing bowl, whisk together the whole eggs, liquid egg whites, Greek yogurt, sea salt, black pepper, and garlic powder until the mixture is smooth and aerated.
Stir the sautéed onions and spinach into the egg mixture and pour everything into the prepared baking dish.
Chop the maple-glazed bacon into bite-sized pieces and sprinkle them evenly over the top of the egg mixture.
Bake for 20 to 25 minutes, or until the center is set and the edges are slightly puffed and golden brown.
