Seared Salmon with Garlic Spinach and Sweet Potato Mash
Pan-seared salmon fillet served over a creamy sweet potato mash and garlicky sautéed spinach, finished with a squeeze of lemon for a bright, zesty touch.
INGREDIENTS
5 oz Salmon Fillet
150g Sweet Potato
2 cups Fresh Spinach
1 tsp Olive Oil
1 tsp Ghee
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in water until tender, about 10-12 minutes.
Drain the potatoes and mash with ghee and a pinch of sea salt until smooth and creamy.
Pat the salmon dry and season with salt and pepper.
Heat half the olive oil in a skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes.
Flip the salmon and cook for another 2-3 minutes until opaque and flaky.
In a separate pan, heat the remaining oil and sauté minced garlic for 30 seconds until fragrant.
Add the spinach to the garlic pan and toss until just wilted.
Plate the sweet potato mash, top with spinach and the seared salmon, and serve immediately.
