PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with 1 tablespoon of olive oil and a pinch of sea salt on the prepared sheet.
Roast the sweet potatoes for 20-25 minutes, tossing halfway through, until the edges are golden and crisp.
While the potatoes roast, slice the turkey sausage into rounds and brown them in a non-stick skillet over medium heat with the remaining half tablespoon of oil.
Add the baby spinach to the skillet and sauté for 1-2 minutes until just wilted.
