1 cup liquid egg whites

1 oz feta cheese
1 cup fresh spinach

PREPARATION
Preheat oven to 375°F and grease a small oven-safe baking dish with olive oil.
Layer the fresh spinach in the bottom of the dish, pressing it down to create a base.
Pour the liquid egg whites over the spinach and season with sea salt and black pepper.
Carefully crack the whole eggs on top of the egg white mixture, keeping the yolks intact.
Bake for 15 to 18 minutes until the egg whites are set and opaque.
Remove from the oven and top with sliced avocado and crumbled feta cheese.
Garnish with red pepper flakes and fresh chives before serving immediately.
