Shape the mixture into a compact loaf and place it in the center of the prepared baking dish.
Wrap the uncured bacon slices over the top of the loaf, tucking the ends underneath to secure them during cooking.
Brush the top of the bacon with 1 tablespoon of the sugar-free BBQ sauce to begin the glazing process.
Bake for 30 minutes, then remove from the oven and brush with the remaining tablespoon of BBQ sauce.
Return to the oven for another 5-10 minutes until the bacon is crisp and the internal temperature reaches 160°F.
