Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild salmon served with garlicky sautéed green beans and nutty brown rice, finished with a bright squeeze of lemon and a pinch of flaky sea salt.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
0.5 cup Cooked Brown Rice
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 to 5 minutes until a golden crust forms, then flip and cook for another 3 minutes until cooked through.
While the salmon cooks, heat the remaining oil in a separate pan over medium heat and add the minced garlic.
Toss in the green beans and a tablespoon of water, then cover and steam for 3 to 4 minutes until tender-crisp.
Warm the pre-cooked brown rice and plate it alongside the salmon and green beans.
Squeeze fresh lemon juice over the salmon and vegetables just before serving.
