INGREDIENTS
7.4 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green beans, trimmed
1 tsp Extra virgin olive oil
1 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
Transfer the steamed cauliflower to a bowl or food processor, add the ghee and a pinch of sea salt, and blend until smooth and creamy.
Heat a skillet over medium heat and add the green beans with a splash of water, covering for 3 minutes to steam-soften.
Remove the lid from the skillet, add half of the olive oil and the minced garlic, and sauté for 2 minutes until the beans are crisp-tender.
Season the salmon fillet with salt and pepper.
In a separate non-stick skillet, heat the remaining olive oil over medium-high heat.
Place the salmon skin-side up in the pan and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through and flaky.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
