130g Sweet Potato
100g Green Beans

PREPARATION
Peel and dice the sweet potato into small cubes.
Boil the sweet potato in a pot of water for 10-12 minutes until soft, then drain and mash until smooth.
Season the salmon fillet with a pinch of salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 3 minutes or until it reaches your preferred level of doneness.
Remove the salmon from the pan and add the green beans and minced garlic to the same skillet.
Sauté the beans for 4-5 minutes until tender-crisp and fragrant.
Plate the sweet potato mash and green beans alongside the salmon, finishing with a fresh squeeze of lemon juice.
