INGREDIENTS
6 oz Wild Atlantic Salmon Fillet
200g Cauliflower florets
100g Fresh Green Beans
2 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from pan and let rest.
In the same skillet, add the ghee and minced garlic, sautéing for 30 seconds until fragrant.
Add the green beans to the skillet and sauté for 5-7 minutes until tender-crisp.
Drain the steamed cauliflower and blend or mash with the Greek yogurt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
