Crispy Chicken Caesar Salad with Garlic Croutons
Pan-seared chicken breast served over crisp romaine lettuce with crunchy garlic-rubbed croutons and a creamy, tangy yogurt-based Caesar dressing.
INGREDIENTS
5 oz Chicken breast
2 cups Romaine lettuce
1 slice Sprouted grain bread
2 tsp Extra virgin olive oil
2 tbsp Plain Greek yogurt
1 tsp Fresh lemon juice
1 tsp Dijon mustard
1 tbsp Grated parmesan cheese
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Season the chicken breast evenly with sea salt, black pepper, and half of the garlic powder.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat and cook the chicken for 5-6 minutes per side until golden and cooked through.
While the chicken cooks, whisk together the Greek yogurt, lemon juice, Dijon mustard, the remaining 1 teaspoon of olive oil, and the remaining garlic powder in a small bowl to create the dressing.
Remove the chicken from the pan and let it rest. In the same pan, add the cubed sprouted grain bread and toast for 2-3 minutes until crispy and golden.
Chop the romaine lettuce and place it in a large bowl. Toss with the prepared dressing until well coated.
Slice the chicken into strips and place on top of the greens, followed by the garlic croutons and a sprinkle of parmesan cheese.
