Golden Beef and Rice Stuffed Peppers
Sautéed lean ground beef and aromatic turmeric rice baked inside vibrant bell peppers for a satisfying meal with a savory, golden finish.
INGREDIENTS
5 oz 93% lean ground beef
2 large bell peppers
0.13 cup cooked brown rice
0.25 cup diced yellow onion
1 clove minced garlic
0.5 tsp turmeric powder
0.5 tsp ground cumin
0.25 tsp sea salt
0.25 tsp black pepper
2 tbsp tomato puree
0.25 tsp avocado oil
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the tops off the bell peppers and remove the seeds and membranes from the inside.
In a large skillet, heat the avocado oil over medium heat and sauté the diced onion and minced garlic until softened and fragrant.
Add the lean ground beef to the skillet, breaking it up with a spoon, and cook until browned through.
Stir in the turmeric, cumin, sea salt, black pepper, tomato puree, and cooked brown rice until the mixture is well combined and takes on a golden hue.
Spoon the beef and rice mixture into the hollowed-out bell peppers, pressing down gently to pack the filling.
Place the stuffed peppers upright in a baking dish and add a splash of water to the bottom of the dish to create steam.
Cover the dish with foil and bake for 30 minutes, then remove the foil and bake for another 10-15 minutes until the peppers are tender and slightly charred on the edges.
Serve immediately while hot.
