INGREDIENTS
7 oz 93% lean ground beef
0.5 cup yellow onion
1 tsp extra virgin olive oil
1 slice sharp cheddar cheese
2 large butter lettuce leaves
0.5 tsp sea salt
0.25 tsp black pepper
1 tsp Dijon mustard
PREPARATION
Thinly slice the yellow onion into half-moons.
Heat the olive oil in a cast-iron skillet over medium-low heat. Add the onions and cook, stirring occasionally, for about 15 minutes until they are golden brown and caramelized. Remove onions from the skillet and set aside.
Increase the skillet heat to medium-high. While the pan heats, divide the ground beef into two equal balls and season the outside of each with sea salt and black pepper.
Place the beef balls into the hot skillet. Use a heavy spatula or a burger press to smash them down firmly until they are very thin and flat.
Cook the patties undisturbed for 2-3 minutes until a deep, dark brown crust has formed on the bottom. Flip the patties over.
Immediately top each patty with the caramelized onions and place the cheddar cheese slice over one of the patties (or split it between both). Cover the pan for 30 seconds to allow the cheese to melt completely.
