6.5 oz Wild Atlantic Salmon Fillet
300g Cauliflower Florets
100g Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic
Sea salt and black pepper to taste
Fresh lemon wedge
PREPARATION
Place the cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, season the salmon fillet with sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat. Sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes until opaque and flaky.
Steam the green beans in a separate pot for 4-5 minutes until bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a food processor or bowl. Add the remaining teaspoon of olive oil, salt, and pepper, and blend or mash until creamy and smooth.
Plate the garlic mashed cauliflower first, top with the seared salmon, and serve the green beans on the side with a fresh squeeze of lemon juice.
