Seared Steak with Garlic Green Beans and Mashed Sweet Potato
Cast-iron seared sirloin served with fluffy mashed sweet potatoes and garlic-sautéed green beans, finished with a touch of rich, nutty ghee.
INGREDIENTS
8.8 oz Top Sirloin Steak
250g Sweet Potato
150g Green Beans
1.5 tbsp Ghee
2 cloves Garlic
PREPARATION
Remove the steak from the refrigerator 30 minutes before cooking to reach room temperature and season both sides generously with sea salt and black pepper.
Peel and chop the sweet potatoes into 1-inch cubes, then place them in a pot of boiling water for 12-15 minutes until fork-tender.
While the potatoes cook, heat a large cast-iron skillet over medium-high heat and add half of the ghee.
Place the steak in the hot skillet and sear for 4-5 minutes per side for medium-rare, then remove from the pan and let it rest on a cutting board.
Drain the sweet potatoes and mash them thoroughly with the remaining ghee and a pinch of salt until they reach a smooth, creamy consistency.
In the same skillet used for the steak, add the green beans and minced garlic, sautéing for 5-6 minutes until they are bright green and tender-crisp.
Slice the rested steak against the grain and serve alongside the mashed sweet potatoes and garlic green beans.
