150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Place the cubed sweet potatoes in a pot of water and bring to a boil, cooking for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash them thoroughly until smooth, adding a pinch of sea salt if desired.
While potatoes cook, heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it skin-side down in the pan, searing for 4-5 minutes per side until the edges are golden and the center is opaque.
Remove the salmon from the pan and set aside to rest.
Add the remaining oil to the same skillet along with the green beans and minced garlic.
Sauté the beans for 3-5 minutes until they are bright green and crisp-tender with slightly toasted garlic.
Plate the sweet potato mash, top with the seared salmon, and serve alongside the garlicky green beans.
