Seared Salmon with Steamed Asparagus and Garlic Cauliflower Mash
Pan-seared salmon fillet served over a velvety garlic cauliflower mash with bright, crisp-tender steamed asparagus.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower florets
0.25 cup Non-fat Greek Yogurt
1 cup Asparagus spears
1 tsp Avocado Oil
1 clove Garlic
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
In the last 4 minutes of salmon cooking, add the asparagus to the steamer basket with the cauliflower to steam until bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or blender with the Greek yogurt and raw garlic, then blend until smooth and creamy.
Spoon the garlic cauliflower mash onto a plate, top with the seared salmon, and serve the steamed asparagus on the side.
