PREPARATION
In a medium mixing bowl, mash exactly half of the banana until smooth, and slice the remaining half into thin rounds.
Whisk the egg whites, Greek yogurt, oat flour, vanilla protein powder, cinnamon, baking powder, and sea salt into the mashed banana until a uniform batter forms.
Heat a large non-stick skillet over medium-low heat and coat with half of the ghee.
Pour the batter into the skillet to form three or four small pancakes, cooking for 3-4 minutes until bubbles appear on the surface.
Flip the pancakes carefully and cook for another 2 minutes until golden brown, then remove them from the pan and set aside.
