2 cups Broccoli rice
1.5 tbsp Extra virgin olive oil
3 cloves Garlic
0.5 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Red pepper flakes
1 tbsp Lemon juice
1 tsp Lemon zest
1 tbsp Fresh parsley
PREPARATION
Pat the shrimp dry with paper towels and season with half of the sea salt and black pepper.
Heat 0.5 tbsp of olive oil in a large skillet over medium-high heat.
Add the broccoli rice to the skillet in an even layer and cook undisturbed for 3-4 minutes until slightly browned and crispy.
Remove the broccoli rice from the pan and set it aside on a plate.
In the same skillet, add the remaining 1 tbsp of olive oil and the minced garlic, sautéing for 30 seconds until fragrant.
Add the shrimp to the pan and cook for 2-3 minutes per side until they are pink and opaque.
Stir in the red pepper flakes, lemon zest, lemon juice, and the remaining sea salt and black pepper.
Return the crispy broccoli rice to the pan and toss everything together for 1 minute to fully combine the flavors.
Garnish the dish with freshly chopped parsley and serve immediately while hot.
