Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served over creamy garlic-infused cauliflower mash with a side of bright, crisp-tender green beans.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
Salt and pepper to taste
PREPARATION
Place the cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam until very tender, approximately 10 to 12 minutes.
While cauliflower is steaming, add the green beans to the steamer for the last 5 minutes of cooking until they are bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a food processor or use a potato masher to blend until creamy and smooth, seasoning with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side up.
Sear the salmon for 4 to 5 minutes per side until the exterior is golden and the fish flakes easily with a fork.
Serve the seared salmon over a bed of the garlic cauliflower mash with the steamed green beans on the side.
